Spinach is a vegetable that I buy because it takes on flavor of the things that you cook or pair it with. I’d say that this recipe tastes like cheese, onion, and a bit of kick from the red peppers!

Ingredients

spinach egg or egg whites onion shredded cheese bread crumbs  sea salt garlic red pepper flakes extra virgin olive oil

Instructions

– Thaw and drain spinach. The drier you can get it the better! Squeeze in a tea towel to remove extra moisture.

- Mix spinach, eggs, onion, cheese, bread crumbs, salt, garlic, and red pepper.

– Form mixture into burger patties or balls about the size of a golf ball

– Heat oil in a skillet adding burgers/balls. – Brown on each side.

These freeze well when cooled completely and stored in an airtight container. Try with regular or brown mustard for dipping!
