I wanted to try something new for a dinner we hosted last week and these Balsamic Green Beans and Mushrooms were a hit! I used fresh green beans but you could use frozen to save yourself some prep time. I would defrost them in the microwave and drain before adding to your baking sheet to keep from diluting the other ingredients.
Ingredients you’ll need for Balsamic Green Beans:
- Fresh or Frozen Green Beans
- White Onion
- Baby Bella Mushrooms
- Garlic – I buy the giant jars of minced garlic. SUCH a time saver!
- Extra Virging Olive Oil
- Balsamic Vinegar

Ingredients
- 1 lb Fresh Green Beans with ends snapped
- 1/4 Onion (sliced)
- 1/2 pint of Baby Bella Mushrooms (cleaned, halved or sliced)
- 5-10 cloves garlic (chopped or minced)
- 2 Extra Virgin Olive Oil
- 1 Tbsp Balsamic Vinegar
- Sea salt (to taste)
Instructions
- Directions:
- Preheat oven to 375 Degrees
- Line baking pan with foil and
- spray with non-stick cooking spray.
- Spread beans, onion, garlic, and mushrooms across pan
- Put oil and vinegar in a small bowl and whisk together. Drizzle dressing over the vegetables and toss until coated.
- Sprinkle with salt to taste.
- Bake for about 25 minutes until beans and onions are done to desired tenderness.

You can make any time during the year but beans and mushrooms are both in season during late summer and early fall so it is extra tasty right now! Of course, feel free to omit the onions, garlic, or balsamic if you do not care for the flavors or you can add something else in! Let us know if you make a swap that you love!
