Ingredients
  • 2 egg OR 2 egg whites
  • 1 Egg White
  • Meat of choice

Sausage, bacon, ham, etc.

  • Vegetable of choice

Onion, pepper, mushroom, garlic, etc.

  • Low Carb tortilla
Instructions
  • Make fresh the morning of or you can also "pre-scramble" your eggs so they only need to be re-heated each morning. Slightly undercook your eggs and do not add salt prior to cooking to keep the eggs from becoming dry or rubbery during reheating.
Notes
It is important to use a "Low Carb" Tortilla on your low carb days. Some tortillas are giant and can be cut into half. Whole Wheat or Gluten Free tortillas are okay on Moderate and High Carb days. On Moderate or High Carb days add 1/2 Cup of Berries, an Apple or a Pear.
