This is a dish the whole family loved! I worried a bit that it may be too spicy for my 5 year old so I left the sausage out of her bowl, added a bit of milk and extra cheese. She loved it! Even asked for seconds!
Ingredients
- 1 pound chicken cut into small 1 inch pieces
- 3-4 tablespoons Extra Virgin Olive Oil
- 1/2 teaspoon Salt
- Black Pepper (to taste)
- 14 oz Andouille Sausage (sliced in thin coins)
- 4 cloves minced garlic
- 4 cups low-sodium chicken broth
- 1 pint heavy cream
- 1 pound Penne Pasta
- 1 ½ tablespoons Cajun seasoning
- 5 oz Shredded Parmesan Cheese
Instructions
Prep
- Season chicken with salt and pepper
- Using your largest skillet with a lid, add in olive oil and chicken. Brown the chicken over medium high heat.
- Once chicken is cooked through, add sausage and continue to cook for 3-4 minutes
- Stir garlic into the chicken and sausage, cooking for an additional 1-2 minutes
- Add into the skillet, uncooked pasta, chicken broth, heavy cream, and Cajun Seasoning
- Stir all ingredients and bring to a simmer over medium high heat.
- Reduce heat to low, and cook for 15-20 minutes with the lid on the skillet.
- Cook until pasta is al dente
- Remove skillet from heat and stir in shredded Parmesan cheese.
- Garnish with additional Parmesan to taste.
Notes
Mod Carb Dinner: This dish is higher in fat with the heavy whipping cream. Serve with a side salad or vegetable.
