Caprese Chicken

Ingredients
- 4 Chicken Breast
- 8 oz Fresh Mozzarella Ball (or log)
- 2 tsp Pesto
- 1 Tomato (thinly sliced)
- 2 Tbsp balsamic vinegar (or to taste)
- 2 tsp Garlic Powder
- 2 tsp Italian Seasoning
- 1/2 tsp Sea salt
- Shredded Parmesan Cheese (Optional for topping or buns)
- Optional Buns for Caprese Sandwiches
Instructions
- Preheat oven to 350 Degrees
- Season Chicken with Garlic, Pesto, and Italian Seasoning.
- Make vertical slices 1/2 to 1 inch apart a little bit further than halfway through.
- Stuff each slit with one slice of mozzarella and one slice of cheese.
- Place in greased casserole dish.
- Bake for 20-35 minutes depending on size of breast until juices run clear.
- Drizzle with Balsamic Vinegar.
Notes
Low Carb Days – Serve over a bed of Spinach or Romaine.
Moderate – Serve with a toasted garlic bun sprinkled with parmesan cheese.
