Carrot Cake Cookies
This is a flexible recipe, meaning you have the option to swap out some of the ingredients to whatever you have on hand. Check out the notes below for how they will affect your macros.

Servings: 1 Batch (5 servings of 2 cookies)
Ingredients
- 1 Cup Quick Oats
- 1/2 cup Almond Flour
- 1/3 cup Vanilla Protein Powder
- 1.5 tsp Baking Powder
- 1.5 tsp Cinnamon
- pinch Sea salt
- 2 Tbsp Coconut Oil (or unsalted butter)
- 1 egg OR 2 egg whites
- 1.5 tsp Cake Batter Flavoring (or Vanilla Extract)
- 4 Tbsp Honey (or Maple Syrup - adjust to taste)
- .75 Cup Carrots (grated)
Instructions
- Grate carrots, set aside.
- Spoon oats into measuring cup, don't scoop out as the oats will become packed...meaning you'll have dry cookies!
- Add almond flour, baking powder, cinnamon, salt, and protein powder to oats. Mix.
- Add in melted oil or butter, egg, flavoring, honey, and carrots. Mix throughly.
- Taste test dough to see if any additional sweetener is needed.
- Scrape to center of the bowl, cover with saran wrap, place in fridge for 30 to 60 minutes. (Don't skip. The oats need to absorb moisture before cooking)
- Preheat oven to 350 degrees.
- Remove from fridge, drop balls of dough onto baking sheet.
- Bake for 10-13 minutes. Cookies should be starting to set when you remove them from the oven. They will not appear completely set.
- Let cookies continue baking on the warm sheet for about 10 minutes before moving to a cooling rack.
Notes
These cookies are for moderate or high carb days only. Prepared with ingredients as listed, macros are: 216 cals 28 Carbs 10 Fat 8 Protein for two cookies.
Swaps and how they affect macros -
- Replace Almond Flour with Regular flour. (Adds Carbs)
- Swap Unsalted Butter for Coconut Oil. (Similar Macros)
- Replace Honey with Maple Syrup. (Similar Carbs)
- "Sugar Free" Maple Syrup in place of Honey (cuts down on carbs but made with fake sugars. If you are eating clean, this swap isn't for you.)
- Cake Batter Flavor with Vanilla Extract. (Similar. You likely have Vanilla already on hand!)
- Add In Raisins - Adds texture and sweetness (adds carbs and sugars)
