Low Carb Protein Pancake and Sausage

These pancakes can be prepped in mass quantities and frozen for later! Just be sure to let them cool completely before transferring to the freezer.

Ingredients
  • 1 Scoop Protein Powder (Vanilla usually mixes well and can be easily adapted. )
  • 1 egg OR 2 egg whites
  • 1/2 tsp Baking Powder
  • 3 Tbsp Milk (or water)

Sausage

  • 1 link Breakfast Sausage (Turkey or Beef Sausage)
Instructions

Pancakes

  • Heat skillet or waffle iron. Spray with non-stick spray.
  • Mix eggs, protein powder, baking powder, and liquid in mixing bowl.
  • Poor batter into hot skillet. Make one large pancake or 2-3 smaller ones.
  • Let heat until bubbles start to form. When the bubbles begin to pop, flip!
  • Flip and cook on opposite side until golden brown.

Sausage

  • Heat or cook sausage until heated though.

Meal Prep

  • Serve each pancake with 1-2 sausage links. Roll pancake around links for a breakfast taco or eat separately with sugar free syrup.
Notes
If freezing, let pancakes cool completely before moving to air tight container or ziplock bag.
