Rocking and rolling into a new week!

I have found that planning meals for certain days of the week doesn’t usually work out because we end up with more leftovers than anticipated (or maybe none at all!) or we have a change in plans. Cooking two meals and having something ready to “Heat & Eat” whether it’s frozen food, a crockpot meal, or grab it on the way home seems to cover all of our week days dinners.

I prefer to skip breakfast and have a larger lunch, but that doesn’t mean you have to do that! I’ve included a breakfast option for you, it is rich and could even be a snack after dinner!

You may not enjoy eating the same thing each day, having leftovers from dinner a couple of days a week is a good way to get a bit more variety. For me, I’d rather cook one thing on Sunday and be done for the week so you’ll usually only see one lunch option on these plans.

tips

  • Grill, Bake, or Instant Pot Chicken Breasts on the weekend for your Monterey Chicken. You can shred or dice several pounds and freeze for future meals like this one.
  • If you cook breakfast on Sunday, that’s the perfect time to fry some bacon for the Monterey Chicken too!
  • You can eat Salmon Salads each day if you’d like! The problem is that Salmon doesn’t keep very long, you can pop a filet in the oven or air fryer so it is fresh!
