Oatmeal Bake

This one is easy to save and eat on the go during the week but it is higher carb so you'll need to be sure your macros allow for it.

Ingredients

Dry ingredients

  • 2.5 Cups old fashioned rolled oats
  • 1/3 Cup brown sugar
  • 1.5 tsp Baking Powder
  • 1 tsp ground cinnamon
  • ½ tsp Sea salt
  • 1/2 cup chocolate chips

Wet ingredients

  • 2 large eggs (lightly beaten)
  • 2 cups Milk
  • 1 tsp Vanilla Extract
  • 3 tbsp salted butter (melted )
  • 2 cups fresh berries (chopped, whatever you like! )
Instructions
  • Preheat oven to 375°F.
  • Butter or spray a 9 x 13 casserole dish
  • Combine dry ingredients.
  • Place half the oat mixture in the baking dish, top with half the berries, and then remaining oats.
  • Whisk the eggs, milk, vanilla, and melted butter. Pour over the oats.
  • Top with remaining berries.
  • Bake uncovered for about 30 minutes, until oats are tender, and the mixture is set.
Notes
Frozen Berries are okay, just make sure you defrost before adding!
