Pizza Casserole

This casserole is high in fat! Schedule this meal on a Low Carb day or be certain to follow your meal guide closely if you choose to eat on a Moderate day. This is not a good option for High Carb days.

Servings: 1 Casserole (about 8 slices)
Ingredients
  • 4 oz Cream Cheese (softened, make sure it is soft all the way through)
  • 5 large eggs
  • 1/3 cup Heavy Whipping Cream
  • 1/4 cup Grated Parmesan Cheese
  • 1/2 teaspoon garlic (minced)
  • 1/2 teaspoon Italian Seasoning
  • 1/2 cup Grated Parmesan Cheese (Asiago or Romano cheese any combination can be used)
  • 2 cups Mozzarella Cheese
  • 1/2 cup low carb pizza sauce
  • 10-15 Slices Turkey Pepperoni
  • Pizza Toppings - Onion, Peppers, Artichokes, Olives, Tomatoes, Spinach, etc.
Instructions
  • Preheat oven to 350°Grease 13x9 inch baking pan.
  • Combine cream cheese and eggs until smooth. Add the cream, 1/4 Cup Parmesan, garlic and Italian Seasoning. You may need an electric mixer to get everything well blended.
  • Sprinkle the 1/2 Cup of Parmesan and 1 Cup of the mozzarella cheese in the bottom of the greased baking pan. Pour egg mixture over the cheese.
  • Bake for 30 minutes then remove from oven.
  • Top with pizza sauce, pepperoni, and vegetables. Cover with remaining mozzarella.
  • Turn broiler on high. Place casserole on top rack to melt cheese. 1-2 minutes.
  • Let set 5-10 minutes before serving.
Notes
You don't have to cover the entire casserole in vegetables but make sure there are a few on your section. 🙂 
Serve with side salads.  
To lower fat I have subbed half and half in place of the heavy cream, saved about 20 grams of fat from the recipe and the casserole still turned out!
