- 1 onion (diced )
- 2 Bell Pepper (any color )
- 1 can of Rotel
- 1-2 Zucchini (diced )
- 1 packet low sodium taco seasoning
- 3 cups spinach (it cooks down! )
- 1-2 cups shredded cheese
