Make this how you like it! If you hate celery (like me) omit it. If you prefer pecans over almonds, swap them out! The fruit is going to increase your carbs so be mindful of that. Grapes should still work for Low Carb days.

Dressing
1/3CupGreek Yogurt, Plain
1TbspLemon Juice
1/3CupReal Mayo
1/4Cupred oniondiced
Chicken Filling
20ouncesChicken Breastdiced or shredded +/-
1/2CupCelerydiced
2Green Applescored and chopped
1CupSeedless Grapeshalved
1/2CupAlmond or Pecan Slices
Instructions
Mix together yogurt, mayo, red onion, and lemon juice in a small bowl. Set aside.
Halve grapes, dice apples, celery, mix with chicken and nuts.
Mix dressing with chicken mixture, cover and put in the fridge for at least an hour.
Prepare wraps and sandwiches the day of to keep them from getting soggy!

Low Carb - Omit apples. Portion into lettuce wraps or a low carb tortillaModerate Carb - Portion into a gluten free tortilla, sandwich thin, whole wheat bun, or serve on top of two rice cakes. Avoid this recipe on High carb days as it does have 20+ grams of fat. Chicken can be what’s easiest/you have on hand. Canned chicken works, rotisserie chicken works, grill, roast, or instant pot your chicken and dice or shred. Allow to cool before mixing.
