Another recipe that you can make work for what meat you have on hand or for your family's tastebuds!
If you choose beef, make sure to use a LEAN cut. 90 or 93% lean to keep this meal macro friendly.
This meal feeds my husband, daughter, and I for two nights easily. If our teenager is here, this is only enough for one night. This recipes is super simple to double though so I will often make two loafs so we have plenty for leftovers or I will freeze one to have on hand for a "heat & eat" night.

Ingredients
Meat Loaf
1.5Lbs Lean Ground Beefor Turkey
3/4CupOatmealor Seasoned Bread Crumbs
1egg OR 2 egg whites
1/2mediumOnionchopped
1/4cupJulienne Carrotsor 1 medium carrot, shredded (Optional)
2tspWorcestershire Sauce
1/4CupLow Sugar Ketchup
2clovesgarlic
Salt and Pepper
Topping
1/2CupLow Sugar BBQor Ketchup
1/2CupLow Sugar Ketchup
Instructions
Preheat Oven to 350 degrees
Mix meat, spices, veggies, egg, and oats together with your hands.
Form into one large loaf or 6 mini loaves.
Place into loaf pan or jumbo cupcake tins.
Bake a loaf for about 60 minutes or mini meatloaves in a cupcake pan for 30-45 minutes.
Topping
Mix together BBQ and Ketchup.
Spread half of the topping over loaf(s) before baking. Reapply remaining mixture about halfway through cooking time.
Notes
Carrots are optional. These are an easy way to sneak in an extra veggie! Feel free to add or remove spices. If your loaf is too sticky, add additional binding ingredient (oats, bread crumbs, etc) If your loaf is dry, add an extra egg white or whole egg!
