When the craving for Chicken Pot Pie hits, but you don't want to stand around at the stove, this Lazy Chicken Pot Pie Recipe is the next best thing. This recipe will have your home smelling of comfort food throughout the day as it cooks in the slow cooker!
2medium russet potatoespeeled & diced into bite size pieces
16ozMixed Frozen Vegetablescarrots, corn, green beans, peas
1cupChicken Broth
1TbspCornstarchsee notes for incorporating
1tspsalt
1/2tspblack pepper
1/2tspcelery seed
1/4tsppoultry seasoningor favorite chicken spices
1cHeavy Whipping Cream
1Can Flaky Layer Biscuits
Instructions
Remove back from freezer the night before serving to thaw.
Pour bag into crockpot on low setting for 6 hours or until chicken is cooked through and potatoes are tender.
Prepare biscuits as directed on can.
Add heavy cream to crock, stir and heat for about 5 minutes or until heated through.
Serve with half biscuit in the bottom of your bowl. Pour in pot pie mixture, top with remaining biscuit.
