Sprinkle cucumber with coarse salt and place in a colander to drain. Let sit for about an hour to allow salt to pull the moisture from the cucumber.
While cucumber is sitting, pour water, rice vinegar, chili pepper and sugar into a small saucepan.
Heat over medium heat until sugar is dissolved and mixture reduces to about half a cup.
Set marinade aside to cool.
After about an hour of the cucumber sitting, pat dry with paper towels.
Pour marinade over cucumbers, cover, and place in the fridge for at least an hour. If you have time to prep further out, these do improve with more time.

Beware that the rice vinegar is a bit stinky! My husband always asks what the heck I’m doing when I make them.
