Ingredients
1ScoopProtein PowderVanilla usually mixes well and can be easily adapted.
1/2mediumBananaRipe is best! (Can substitute with 1/2 cup unsweetened applesauce)
2Egg White
1/2TbspMilkor water
1/2tspCinnamonoptional or stevia/swerve
Sausage
1linkBreakfast Sausage1-2 links Turkey or Pork Sausage
Instructions
Pancakes
Heat skillet or waffle iron. Spray with non-stick spray.
Mash banana, mix in egg whites.
Gradually stir in protein powder, baking powder, and liquid in mixing bowl.
Poor batter into hot skillet. Make one large pancake or 2-3 smaller ones.
Let heat until bubbles start to form. When the bubbles begin to pop, flip!
Flip and cook on opposite side until golden brown.
Sausage
Heat or cook sausage until heated though.
Meal Prep
Serve each pancake with 1-2 sausage links. Roll pancake around links for a breakfast taco or eat separately with sugar free syrup.
Notes
For meal prep, slightly undercook the pancakes to keep them moist when reheated!If freezing, let pancakes cool completely before moving to air tight container or ziplock bag.
