Ingredients
Meat Loaf
1.5Lbs Lean Ground Beefor Turkey
1TbspExtra Virgin Olive Oil
1/2mediumOnionchopped
1/4cupJulienne Carrotsor 1 medium carrot, shredded (Optional)
2TbspWorcestershire Sauce
18 oz canTomato Sauce
1/4CupLow Sugar Ketchup
2Tbspbrown sugar
2clovesgarlic
Salt and Pepper
Topping
1/2CupLow Sugar BBQor Ketchup
1/2CupLow Sugar Ketchup
Instructions
Sauté onions and carrots in EVOO in a large skillet until starting to soften. Add garlic and heat until fragrant.
Add in ground meat and cook until browned. (If cooking a fattier cut of meat you may need to drain grease at this time)
Mix in garlic, salt & pepper, tomato sauce, worcestershire, ketchup, and brown sugar. Simmer for 5-10 minutes.
Topping
Mix together BBQ and Ketchup.
Spread onto hamburger buns and serve like Sloppy Joes.
Notes
Carrots are optional. These are an easy way to sneak in an extra veggie! Mod Carb - Serve over whole wheat or gluten free hamburger buns. Low Carb - Eat alone, over spinach, green beans, or broccoli.
