Make these into golf ball size balls or patties. I like these when the weather starts to cool off or I'm bored with salads. A quick way to get 1-2 servings of vegetables!

Ingredients
1pkgSpinach, frozenthawed
1egg OR 2 egg whites
2Egg White
1/4mediumOnionchopped or minced
1/4 - 1/2cupShredded Cheese
1/2cupBread crumbs / Oats / Almond FlourSub Oats or Almond Flour to make gluten free
Sea saltto taste
garlicto taste
1-2tspRed pepper flakesoptional
1-2tbspExtra Virgin Olive Oil
Instructions
Thaw and drain spinach. The drier you can get it the better! Squeeze in a tea towel to remove extra moisture.
Mix spinach, eggs, onion, cheese, bread crumbs, salt, garlic, and red pepper.
Form mixture into burger patties or balls about the size of a golf ball
Heat oil in a skillet adding burgers/balls.
Brown on each side.
Notes
These freeze well when cooled completely and stored in an airtight container. Try with regular or brown mustard for dipping!No time?
