A light salad that you can throw together before your summer BBQ

Ingredients
Salad
1BagBaby Spinach
1/4smallred onionthinly sliced
1/2canMandarin Oranges in waterdrained
4ozFeta Cheese Crumbles
1/2cupDried Cranberries
1/2cupWalnutsoptional
Dressing
Raspberry Vinaigrette Dressing
Instructions
If necessary, wash and dry spinach. Pour half into serving bowl.
Top spinach with half oranges, onion, cranberries, feta, and nuts. Repeat with a second layer of all ingredients.
Serve with Raspberry Vinaigrette Dressing.
Notes
Candied nuts are yummy on this salad too but sometimes I opt for regular nuts to keep sugars in check with dried fruit. Mod Carb Salad - Carbs are not high with this salad but it would be hard to squeeze into a low carb day.
