Ingredients
  • 1 avocado (ripe)
  • 6 large eggs (hard boiled, peeled and cooled)
  • 1 cup Grape or Cherry Tomatoes (Cut into halves)
  • 4 strips Bacon (cooked and chopped)
  • 1/2 cup green onions (chopped)
  • 2 tsp garlic powder
  • 1/2 tsp Salt & Pepper
Instructions
  • Slice eggs into halves or quarters so they are easy to smash.
    Avocado BLT 1 - Avocado BLT Egg Salad
  • In a medium bowl combine eggs, avocado, garlic, salt & pepper; smash with a fork until combined.
  • Add in bacon pieces, tomatoes and green onions. Mix well.
  • Add additional seasoning if desired.
Notes
Low Carb – Serve over lettuce, spinach, in lettuce wraps or in a low carb tortilla!
