If you love Big Macs, you’re going to love this low carb Big Mac Salad! We tend to eat this in the summer because we love burgers but it is a lighter version over a bed of lettuce. Really, it would be okay in winter with the burger served warm too!
We usually don’t need a side with this meal but you could serve with berries for some extra fiber and a sweet treat at the end of the meal!

If you are meal prepping for the week, you may want to keep the meat separate and heat it up before eating. I also keep the cheese separate so it doesn't get soggy from the tomato and pickles. You can cut down on your tupperware if you don't mind eating it cold.

Ingredients

Salad

  • 1 lb Lean Ground Meat (LEAN Beef or Turkey)
  • 1 Large Head Romaine lettuce (Iceberg is okay to substitute)
  • 1 cup Tomatoes (chopped)
  • 1/8 cup Onion (diced)
  • 6 oz Cheddar cheese (Shredded or Cubed)
  • 1/2 cup Pickles (diced)
  • Salt and Pepper (as preferred)

Dressing

  • 1/2 cup + 2 Tbsp Real Mayo
  • 2 tbsp Pickles (diced)
  • 2 1/2 tsp Yellow Mustard
  • 1 tsp White Vinegar
  • 1/2 tsp Paprika
  • Zero Calorie Sweetener (Swerve, Stevia, or Erythritol; adjust to taste)
Instructions

Salad

  • Cook meat in a skillet over high heat. Season with sea salt and pepper to taste.
    Cooked Burger
  • Cut up or tear lettuce, slice tomato, onion, pickles, and cheese. Combine the remaining salad ingredients in a large bowl. Add the ground beef.

Dressing

  • Whisk together mayo, mustard, and vinegar. If it is too thick, you can add a bit of water. Mix in paprika, diced pickles, and sweetener to taste. Split into separate containers for meal prep and refrigerate.
Notes
Low Carb – An awesome low carb day lunch or dinner.  
Mod Carb Days – This meal is higher in fat since it includes beef, cheese, and mayo.  Be conscious to keep fats low the remainder of your day if it is a mod carb day.
