If you’re like me, you like to eat! Buffalo Chicken and Vegetable Dish is a Fit Food but feels like a Fun Food when you eat it! It feels filling and hearty, tastes delicious but it’s full over veggies!

A lot of times….okay, the majority of the time. I forget to think about what’s for dinner until the day it’s time to eat. That’s when my Pressure Cooker comes in handy because it cooks frozen chicken! Use the Poultry setting and set the timer for 15 minutes. It will take a few minutes for the pressure to build so plan about 20 BUT if you forget to thaw the chicken…it’s gonna be okay!

LOW CARB BUFFALO CHICKEN AND VEGGIE DISH

This meal is light but feels like comfort food so it is good in the summer or the winter! This recipe is SUPER flexible, don't feel like you need to measure everything precisely. For reference, a serving of chicken is 4-6 ounces and a serving of broccoli is 1 cup.

Ingredients
  • 4 Chicken Breast
  • 1 Small Spaghetti Squash
  • 1/2 Cups Buffalo Sauce (adjust to taste)
  • 4 Cups Broccoli Florets (Fresh or Frozen)
  • 1 Tbsp Ranch Seasoning (adjust to taste)
  • 1 Cup Cheddar Cheese
  • 3 Cloves Garlic (diced)
  • 1/2 Onion (thinly sliced)
Instructions

Marinade

  • Place chicken in buffalo sauce with onion and garlic for at least 30 minutes prior to cooking.

Chicken

  • Cook chicken as desired in crock pot, instant pot, in the oven, or on the grill. When juices run clear shred or cube the chicken into bite size pieces.

Spaghetti Squash

  • While chicken is cooking, slice spaghetti Squash in half, clean out seeds
  • Option 1 - Oven Baked Cook flat side down on a baking sheet with olive oil at 400 degrees for about 40 minutes. A
  • Option 2 - Microwave Place about 1 inch of water in microwave safe baking dish, place both halves cut sides down, microwave on high for 10-15 minutes.
  • When squash starts to deepen in color and easily flake it is done. Sprinkle squash with ranch seasoning before shredding.

Broccoli

  • Option 1 - Microwave Cook frozen broccoli in microwave as directed on package. Cook one bag of frozen broccoli in microwave or in the oven with spaghetti squash. Add some EVOO and garlic/ranch seasoning.
  • Option 2 - Oven Roasted Place broccoli at one end of the same baking sheet as spaghetti squash. Drizzle with a tablespoon of EVOO and Ranch Seasoning.

Combine

  • Mix squash, chicken, and broccoli into one large bowl or serving dish. Serve topped with shredded cheese.

Low Carb - As described
Mod Carb - Serve chicken and broccoli over rice.  
If you have some family that is hesitant about vegetables, try serving over rice instead of squash. You could use cauliflower rice if you're on a low carb day.  Ranch Dressing can also help the less adventurous eater feel more comfortable!
