This recipe is SUPER flexible, don't feel like you need to measure everything precisely. For reference, a serving of chicken is 4-6 ounces and a serving of broccoli is 1 cup.

4Chicken Breast
1SmallSpaghetti Squash
1/2CupsBuffalo Sauceadjust to taste

Instructions
Marinade
Place chicken in buffalo sauce with onion and garlic for at least 30 minutes prior to cooking.
Chicken
Cook chicken as desired in crock pot, instant pot, in the oven, or on the grill. When juices run clear shred or cube the chicken into bite size pieces.
Spaghetti Squash
While chicken is cooking, slice spaghetti Squash in half, clean out seeds
Option 1 - Oven Baked
Cook flat side down on a baking sheet with olive oil at 400 degrees for about 40 minutes. A
Option 2 - Microwave
Place about 1 inch of water in microwave safe baking dish, place both halves cut sides down, microwave on high for 10-15 minutes.
When squash starts to deepen in color and easily flake it is done. Sprinkle squash with ranch seasoning before shredding.
Broccoli
Option 1 - Microwave
Cook frozen broccoli in microwave as directed on package. Cook one bag of frozen broccoli in microwave or in the oven with spaghetti squash. Add some EVOO and garlic/ranch seasoning.
Option 2 - Oven Roasted
Place broccoli at one end of the same baking sheet as spaghetti squash. Drizzle with a tablespoon of EVOO and Ranch Seasoning.
Combine
Mix squash, chicken, and broccoli into one large bowl or serving dish. Serve topped with shredded cheese.
