This meal may not be ideal if you have little ones. Unless you know they like shrimp and spicy foods, I would plan a heat and eat meal for them like chicken nuggets or a frozen skillet meal for them.

Ingredients
  • Bell Pepper (sliced or chopped)
  • Zucchini (sliced into coins or halves)
  • Yellow Squash (sliced into coins or halves)
  • Asparagus (cut into 1-2 inch pieces)
  • Sausage (sliced into coins)
  • Shrimp (peeled)
  • Cajun Seasoning
  • Salt and Pepper
  • Extra Virgin Olive Oil
Instructions
  • Heat oil in a large skillet, add veggies, and cook over medium heat until almost tender.
  • Add in seasoning and sausage until starting to warm.
  • Add the shrimp at the very end as they will only take a few minutes to cook. Shrimp are done when they start to turn pinky/orange.
Notes
You can’t mess this up! Choose as much or as little of each ingredient as you like. If you do not like an ingredient, you can exclude it. You can also choose to double up on sausage or shrimp if you would prefer. Moderate Carb – Serve with Cajun Rice or Red Beans and Rice Low Carb – Eat alone
