This meal is heavy.
Be sure to add a side salad or your favorite frozen vegetable. Adding something green with fiber will help fill up your tummy and you will be less likely to overeat.
Cheeseburgers aren’t necessarily full of nutrients, (although I wish they were!) adding a side of vegetables will help fill those gaps!
CHEESEBURGER CASSEROLE
This dish is family-friendly and simple to throw together. You can do the majority of prep on the weekend before to save time or forget the casserole and serve straight from the skillet!

Ingredients
- 1 Pound Lean Ground Beef (or turkey)
- 2 Cups Whole Wheat or Gluten Free Pasta (shells, elbows)
- 1/2 Medium Onion (chopped or diced)
- 2-3 Cloves Garlic (minced)
- Hamburger Seasonings (Salt & Pepper, Worcestershire or any other seasonings you put on burgers, to taste.)
- 28 oz can Diced Tomatoes (or 2 Large Tomatoes, diced)
- 2-3 TBSP Low Sugar Ketchup
- 2-3 TBSP Dijon Mustard
- 2 Cups Shredded Cheese
- 3-4 Pickles (Diced)
Instructions
- Preheat oven to 350 degrees.
- Cook pasta as directed on the package.
- Brown lean beef or turkey with onion
- Drain meat and return to skillet.
- Add garlic, salt, pepper, and Worcestershire if desired.
- Add tomatoes, ketchup, and mustard.
- Mix in drained pasta and spread half of mixture into a greased casserole dish.
- Sprinkle with 1 cup of shredded cheese.
- Add the remaining meat mixture and top with remaining shredded cheese. (I normally go light on the cheese on a section of the casserole for myself.)
- Bake for about 15 minutes until cheese is melted.
- Top with diced pickles.
Notes
MOD CARB MEAL - Be sure to serve with a vegetable on the side!
Simplify Your Meal Prep - If you are meal prepping, brown your meat at the beginning of the week. Just cook your pasta the day of and start at step number 5.
