There are so many ways that you can make this recipe!  Use a skillet or an instant pot.  Make sauce from scratch or use sauce from a jar.  Eat it over veggies and make pasta for the fam to keep everyone happy!

Chicken Alfredo - From Scratch

Ingredients

Chicken & Broccoli

  • 4 medium Chicken Breast
  • 2 tsp Chicken Bouillon (- For Instant Pot Prep)
  • garlic (minced or powder)
  • 1 tsp Italian Seasoning
  • 1-2 Tbsp Extra Virgin Olive Oil
  • 1 pound Broccoli Florets (chopped)

Sauce

  • 5 Tbsp salted butter
  • 8 oz Heavy Whipping Cream
  • 6 cloves garlic (minced)
  • 4 oz Cream Cheese
  • 3/4 Cup Shredded Parmesan Cheese
  • 1/2 Cups Milk
  • 3 Tbsp Almond Flour
  • Salt and Pepper

Base Choices

  • 1 small Spaghetti Squash (Low Carb Base Option 1)
  • 1 pound Broccoli Florets (Low Carb Base Option 2)
  • 1 package Whole Wheat or Gluten Free Pasta (High Carb Base)
Instructions

Skillet Directions

  • Chop chicken into bite size pieces.
  • Season with Italian seasonings and garlic
  • Warm EVOO in a skillet and heat chicken until no longer pink in the center
  • Blanch broccoli florets or heat frozen broccoli in microwave and drain.

Sauce

  • Melt butter and cook garlic until fragrant.
  • Add whipping cream, cream cheese, almond flour, milk, Italian Seasoning, salt, pepper, and shredded parmesan.
  • Heat until cheeses are melted through, add chicken and broccoli back to skillet.

Instant Pot Directions

  • Put frozen chicken into instant pot with seasonings,
  • Add in 1 cup of water and bouillon.
  • If prepping low carb base, cut spaghetti squash in half, clean out insides, place wire rack on top of chicken and squash on top.

  • Place lid on instant pot, seal, and lock. Set timer for 15 minutes for frozen chicken, 7-8 minutes for thawed chicken.
  • Slow vent, remove lid and squash, shred squash with a fork, sprinkle with garlic powder.
  • Drain liquid from pot. Remove the chicken, shred or chop chicken, return to instant pot. Add in cooked broccoli.

  • Pour sauce into instant pot with chicken and broccoli. Turn on "sauté" feature, stirring often until heated through. Change setting to "keep warm".
  • Serve sauce over chosen Base.

Noodles - If desired

  • While chicken and sauce are cooking, boil water and cook 1 package of whole wheat or gluten free noodles per directions on package.
