Make this how you like it! If you hate celery (like me!) omit it. If you prefer pecans over almonds, swap them out! Adding fruit is going to increase your carbs so be mindful of that. Grapes should still work for Low Carb days but if you are following a moderate plan you may be able to get away with doing crasins OR diced apples instead and still hit your macros serving this in lettuce wraps or alone. Avoid this recipe on High carb days as it does have 20+ grams of fat.

Servings: 1 Batch (4 Meals)
Ingredients
Dressing
- 1/3 Cup Greek Yogurt, Plain
- 1 Tbsp Lemon Juice
- 1/3 Cup Real Mayo
- 1/4 Cup red onion (diced)
Chicken Filling
- 20 ounces Chicken Breast (diced or shredded +/-)
- 1/2 Cup Celery (diced)
- 2 Green Apples (cored and chopped)
- 1 Cup Seedless Grapes (halved)
- 1/2 Cup Almond or Pecan Slices
Instructions
- Mix together yogurt, mayo, red onion, and lemon juice in a small bowl. Set aside.
- Halve grapes, dice apples, celery, mix with chicken and nuts.
- Mix dressing with chicken mixture, cover and put in the fridge for at least an hour.
- Prepare wraps and sandwiches the day of to keep them from getting soggy!
Notes
Low Carb - Omit apples. Portion into lettuce wraps or a low carb tortilla
Moderate Carb - Portion into a gluten free tortilla, sandwich thin, whole wheat bun, or serve on top of two rice cakes.
