Cuac & Shrimp
This recipe is flexible!
Buy fully prepped shrimp or cook, peel, and devein yourself. And there's no shame in buying pre-made guacamole! Fresh, homemade is always a bit more delicious but sometimes convenience wins and that's okay!

Servings: 1 Snack
Ingredients
- 6 slices Cucumber (6-10 Slices)
- 3 prawns Shrimp (3-6 Shrimp depending on size)
- 2 Tbsp Guacamole
Instructions
- Slice cucumber into thin coins.
- Buy Shrimp cooked, peeled, and deveined or you can do them yourself!
- Serve with guacamole.
Notes
If you are packing this snack "to go", it may be easier to just use your guacamole as dip for both your cucumbers and shrimp. This photo was super jumbo shrimp that barely fit onto one cucumber slice. If you are using smaller shrimp go ahead and double or triple the quantity!
If you have a seafood or shellfish allergy or just don't like it, substitute with grilled chicken bites or choose another Low Carb Snack from the sidebar!
