A few years ago, I started filling my deep freeze with casseroles, dump meals, and other freezer meals before Thanksgiving hit. This Western Beef Quick Casserole is one I sometimes a recipe I throw in the mix!
Mass meal prep will take a few hours out of your weekend but I promise, you won’t regret having dinner ready to go several days a week once the holidays hit!
ingredients for western beef casserole
- Ground Beef, browned & drained
- Kidney Beans, drained & rinsed
- Can of corn, drained
- Can of tomato soup or crushed tomatoes
- Yellow Onion, diced
- Milk or Water
- Chili Powder
- Garlic Powder

Cook Time: 2 hours hours 15 minutes minutes
Total Time: 2 hours hours 20 minutes minutes

Ingredients
- 1.5 Pounds Lean Ground Beef (Browned, Drained)
- 16 oz Can Kidney Beans (rinsed and drained)
- 16 oz can whole corn (drained)
- 1 Can Can Tomato Soup (can sub 1.25 cup crushed tomatoes)
- 1 small Yellow Onion (chopped)
- 1/4 Cup Milk (Water)
- 2 Tsp Chili Powder
- 1/2 tsp Garlic Powder
- 1 Cup Shredded Cheese
Instructions
Freezer Prep
- Brown Beef and drain grease, set aside to cool while getting other ingredients ready.
- Combine all ingredients (add any additional spices you like)
- Transfer into Ziploc bag and freeze flat.
Ready to Cook
- Thaw overnight
- Line slow cooker and dump contents into crock pot.
- Cook over LOW heat for 4 hours or HIGH for 1-2 hours.

Tips
- If you are doing a big meal prep, brown all of your meat at once then portion into ziplock for your recipe.
- Make sure meat is cool before you seal it up.
- Serve with a side salad or microwave frozen vegetable.
- Top with extra cheese just before serving!
