Servings: 1 Dinner (6-8 Servings)
Ingredients
- 2-3 Pounds Chicken, Steak, or Shrimp
- 3 Bell Pepper (cored and sliced, any variety)
- 1 Onion (halved and sliced)
- 1 Tbsp Extra Virgin Olive Oil (Optional for skillet cooking)
Seasoning
- 1 Packet Fajita Seasoning or Marinade
- Juice from Half a Lime (Optional)
- Fajita Toppings (Sour Cream, Cheese, Guacamole, Salsa)
- Tortillas
Instructions
- Marinate chicken and/or steak at least 30 minutes prior to cooking
- Cook chicken until juices run clear or steak to desired doneness. Shrimp will only need to cook for a few minutes, wait until the last couple of minutes to cook. Shrimp will turn from pink to white when done.
- Pull meat from grill or skillet, begin heating peppers and onions.
- Thinly slice meat. Toss back in with veggies as they start to soften, add lime juice if desired.
Notes
Low Carb - Serve over a bed of lettuce or in a low carb tortilla
Mod Carb - Serve in a tortilla with Rice OR Beans
