How do you thicken chicken pot pie filling?

If the sauce isn’t thick enough for your liking you can simply mix together 1 tablespoon of cornstarch with 2 tablespoons of water, the heavy cream or milk. You’ll need to bring the sauce back up to temperature. If you need it quickly, you can heat the mixture up in the microwave and pour it in with the heavy cream. Make sure you allow time for the slow cooker to heat all the ingredients back up.

What ingredients do I need to make Lazy Chicken Pot Pie in the Slow Cooker?

  • 2.5 Pounds Boneless Chicken Breast – Cut into bite size pieces
  • 1 cup Yellow onion, diced (one small onion)
  • 2 large Potatoes, peeled & diced into bite size pieces
  • 16 oz Mixed Frozen Vegetables, carrots, corn, green beans, peas
  • 1 cup Chicken Broth
  • 1 Tbsp Cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp celery seed
  • 1/4 tsp poultry seasoning (or favorite chicken spices)
  • 1/2 c Heavy Whipping Cream
  • 1 Can Flaky Layer Biscuits

Ingredients
  • 2.5 Pounds boneless skinless chicken breasts

  • 2 medium russet potatoes (peeled & diced into bite size pieces)
  • 16 oz Mixed Frozen Vegetables (carrots, corn, green beans, peas)
  • 1 cup Chicken Broth
  • 1 Tbsp Cornstarch (see notes for incorporating)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp celery seed
  • 1/4 tsp poultry seasoning (or favorite chicken spices)
  • 1 c Heavy Whipping Cream
  • 1 Can Flaky Layer Biscuits
Instructions
  • Remove back from freezer the night before serving to thaw.
  • Pour bag into crockpot on low setting for 6 hours or until chicken is cooked through and potatoes are tender.
  • Prepare biscuits as directed on can.
  • Add heavy cream to crock, stir and heat for about 5 minutes or until heated through.
  • Serve with half biscuit in the bottom of your bowl. Pour in pot pie mixture, top with remaining biscuit.
