Do you love cucumbers in the summer but after so many they start to get a little bland and boring? That’s how I feel anyway! Marinated Spicy Cucumbers are a twist that’s low calorie and low carb.
You’ve heard it before that I’m always trying to find crowd pleasing sides that include vegetables, this dish comes from the same inspiration. Get a vegetable to my neighborhood BBQ that I like, but other people do too!
I must admit that this is one that isn’t 100% a crowd pleaser. BUT people either LOVE it OR they just aren’t fans of it. The good thing is that it’s easy and inexpensive, so if you love this side, it’s inexpensive and easy to make. If you don’t, it was inexpensive and easy to make!
Ingredients
- 2-3 Large Cucumbers
- 1/4 red onion
- 1/2 Cup Rice Vinegar
- 1/2 Cup Water
- 3 Tbsp White Sugar
- Sea salt
- 1/4 to 1/2 tsp Crushed Red Pepper
Instructions
- Sprinkle cucumber with coarse salt and place in a colander to drain. Let sit for about an hour to allow salt to pull the moisture from the cucumber.
- While cucumber is sitting, pour water, rice vinegar, chili pepper and sugar into a small saucepan.
- Heat over medium heat until sugar is dissolved and mixture reduces to about half a cup.
- Set marinade aside to cool.
- After about an hour of the cucumber sitting, pat dry with paper towels.
- Pour marinade over cucumbers, cover, and place in the fridge for at least an hour. If you have time to prep further out, these do improve with more time.
