Chicken sausage and potato sheet pan dinner is a great week night dinner or a simple way to meal prep lunches for the upcoming week!

How much to cook?!

You’ll need 1-2 sausage links per person depending on how hungry you are and the size you choose! With a package of 6-8 full size sausage links, this meal normally feeds our family of 4 for one night. If our teen is not home we may be able to get two dinners!

Meal Prep Tip

The potatoes will take the longest to cook. If you are rushed you could heat the potato bites in the microwave for a few minutes before tossing in oil, garlic, and adding to the sheet pan.

One Pan - Sausage, Potato, & Beans

This is a simple meal that you can throw together on a busy week night. The only dishes you will have are a sheet pan and a cutting board!

Servings: 1 Dinner (about 4 servings)
Ingredients
  • 1 Pkg Chicken Sausage
  • 1 Pound Frozen Green Beans (or Fresh!)
  • 1 Pound Potato (diced into bite size pieces. )
  • 1/2 Small Onion
  • 2 Tbsp Extra Virgin Olive Oil
  • 5 Cloves garlic (minced)
  • Italian Seasoning blend (or other seasoning to taste)
Instructions
  • Preheat oven to 425 degrees
  • Slightly thaw green beans in the microwave while slicing potatoes. Thaw just long enough to melt the ice, then drain so water your dish does not get watered down.
  • Slice sausage into thick coin size pieces.
  • Toss everything in 2-3 Tablespoons of EVOO, with 5-6 cloves of garlic, salt, pepper, Italian Season, or seasonings of choice.
  • Bake for 40 minutes or until veggies are tender.
  • Stir periodically. Sprinkle with parmesan before serving.
