Ingredients
- 1/2 pound Natural Roast Beef
- 10 oz Baby Bella Mushrooms sliced
- 1/2 Medium Onion (Sliced)
- 3 cloves Garlic (minced)
- 2 T Extra Virgin Olive Oil
- 8 slices Provolone Cheese
- 2 Large Green Pepper
Instructions
- Preheat the oven to 400 Degrees
- Cut 2 large green peppers and core.
- Heat beef, mushroom, onion, garlic, and EVOO over medium heat until onions and mushrooms are cooked.
- Place one piece of the cheese in the pepper and fill with ¼ of the meat mixture.
- Bake for 10 minutes
- Top with 2nd slice of cheese, bake for another 10 minutes.
- These reheat well but do have a lot of “juice” when reheated. Be sure to drain before cutting up and eating.
Notes
Serve with a side of rice or extra vegetable.
