Skillet Meatloaf
Another recipe that you can make work for what meat you have on hand or for your family's tastebuds!
If you choose beef, make sure to use a LEAN cut. 90 or 93% lean to keep this meal macro friendly.
This recipes is super simple to double and have plenty for leftovers or freeze to have on hand for a "heat & eat" night.

Servings: 1 Meal (4-6 Servings)
Ingredients
Meat Loaf
- 1.5 Lbs Lean Ground Beef (or Turkey)
- 1 Tbsp Extra Virgin Olive Oil
- 1/2 medium Onion (chopped)
- 1/4 cup Julienne Carrots (or 1 medium carrot, shredded (Optional) )
- 2 Tbsp Worcestershire Sauce
- 1 8 oz can Tomato Sauce
- 1/4 Cup Low Sugar Ketchup
- 2 Tbsp brown sugar
- 2 cloves garlic
- Salt and Pepper
Topping
- 1/2 Cup Low Sugar BBQ (or Ketchup)
- 1/2 Cup Low Sugar Ketchup
Instructions
- Sauté onions and carrots in EVOO in a large skillet until starting to soften. Add garlic and heat until fragrant.
- Add in ground meat and cook until browned. (If cooking a fattier cut of meat you may need to drain grease at this time)
- Mix in garlic, salt & pepper, tomato sauce, worcestershire, ketchup, and brown sugar. Simmer for 5-10 minutes.
Topping
- Mix together BBQ and Ketchup.
- Spread onto hamburger buns and serve like Sloppy Joes.
Notes
Carrots are optional. These are an easy way to sneak in an extra veggie!
Mod Carb - Serve over whole wheat or gluten free hamburger buns.
Low Carb - Eat alone, over spinach, green beans, or broccoli.
