I know if we are going to dinner at a friend’s house or a potluck, I need to make sure to take a green vegetable. If I don’t, it is very probable that all of the side options will be carbs or fats. But who wants to be the lame-o that shows up with raw broccoli and carrot sticks that no one else will eat? Not me! I try to come up with sides that allow me to get the serving of veggies that I need but also surprise people how tasty they are!
Spinach, Fruit & Feta Salad
A light salad that you can throw together before your summer BBQ

Servings: 1 Batch (10 Servings)
Ingredients
Salad
- 1 Bag Baby Spinach
- 1/4 small red onion (thinly sliced)
- 1/2 can Mandarin Oranges in water (drained)
- 4 oz Feta Cheese Crumbles
- 1/2 cup Dried Cranberries
- 1/2 cup Walnuts (optional )
Dressing
- Raspberry Vinaigrette Dressing
Instructions
- If necessary, wash and dry spinach. Pour half into serving bowl.
- Top spinach with half oranges, onion, cranberries, feta, and nuts. Repeat with a second layer of all ingredients.
- Serve with Raspberry Vinaigrette Dressing.
Notes
Candied nuts are yummy on this salad too but sometimes I opt for regular nuts to keep sugars in check with dried fruit.
Mod Carb Salad - Carbs are not high with this salad but it would be hard to squeeze into a low carb day.
