Taco Potato / Stuffed Potato

Get as fancy with this meal as you like (or have time for!) Keep it simple with cheese and salsa or really dress it up! Not in the mood for tacos? Go traditional and season your meat as desired but top with some butter and sour cream!

Ingredients
  • 1 Pound Lean Ground Meat (Beef, Turkey, Chicken)
  • 4 Small Sweet Potato or Regular Potato
  • 1 package Low Sodium Taco Seasoning
  • Taco Toppings (cheese, onion, salsa, sliced avocado, guacamole, olives, Greek yogurt / sour cream, etc.)
Instructions
  • Cook meat, drain grease, add in taco seasoning as directed.
  • Puncture potatoes and bake in microwave or oven until soft when poked
  • Smash potatoes, top with meat
Notes
Let cool completely before putting lids on. Keep toppings that you will not want heated in separate container. If you want to try to keep your carbs lower, a tortilla is usually 10-15grams fewer carbs than a one cup of potato.
