With my recipes you can always swap out the meat for what you have on hand. Though the recipe is called TURKEY TACO SOUP, feel free to use Beef or Chicken would also be awesome! Have some sausage on hand? Mix a bit of it in with another leaner meat! These recipes are simple guides, make them work for you!

What you need for Turkey Taco Soup

  • 20 ounces of lean meat
  • White Onion
  • Can of Diced Tomatoes
  • Canned Corn
  • Black Beans
  • Kidney Beans
  • Rotel
  • Chicken Broth
  • Taco Seasoning
  • Ranch Seasoning
  • Your favorite taco toppings – Cheese, Sour Cream, Cilantro, Avocado, etc.
  • Tortilla Chips

Taco Soup

You can also make this in a single pot on the stove and let simmer for a couple of hours. Or use your Instant Pot with the simmer feature to brown the meat, then switch over to slow cooker.

Servings: 1 Batch (about 8 servings)
Ingredients
  • 20 oz Lean Ground Turkey
  • 1 Onion (chopped)
  • 1 28 oz Diced Tomatoes (Canned)
  • 1 Can Corn (Try Mexican or Southwest Style)
  • 1 Can Black Beans (drained and rinsed)
  • 1 Can Kidney Beans (drained and rinsed)
  • 1 Can Rotel (diced tomato and chilies)
  • 2 Cups Broth (add more for thinner soup, less for thicker!)
  • 2 Tbsp Taco Seasoning
  • 1 Tbsp Ranch Seasoning
  • Salt and Pepper (to taste)
  • Taco Toppings ((avocado, cheese, salsa, cilantro, sour cream or Greek yogurt, etc. )
Instructions
  • Brown meat with onion and drain
  • Return to pot or crock pot
  • Add in all remaining ingredients.
  • Salt to taste.
  • Heat on low for two hours or more.
Notes
Mod Carb or High Carb Meal:
Beans are high in carbs so this can’t be altered to be a low carb meal unfortunately.
Serve with your favorite toppings and Tortilla Chips.  Be sure to check your carb allotment before going crazy with the chips!
