You can also make this in a single pot on the stove and let simmer for a couple of hours. Or use your Instant Pot with the simmer feature to brown the meat, then switch over to slow cooker.

Instructions
Brown meat with onion and drain
Return to pot or crock pot
Add in all remaining ingredients.
Salt to taste.
Heat on low for two hours or more.
