Choose whatever veggies you would like for these fritters. Zucchini is currently in season and abundance so you may want to do just Zukes but mix and match with whatever you have on hand or like. Zucchini, Squash, Shredded Carrots, Onion, are ideas. The total amount of veggies is 4 cups but you decide how to get there!
Ingredients
- 4 cups of shredded vegetables
- 2-4 cloves garlic
- 2/3 cup of Flour or Oat Flour or Breadcrumbs
- 2 large eggs
- Seasoning if desired. Mrs. Dash, Italian Blend, Salt and Pepper, etc.
- EVOO
Instructions
- Shredded zucchini and squash will need to have the liquid pulled before you can prepare.
- Sprinkle with salt, let set for 10-15 minutes then drain in a tea towel or pat dry with paper towels.
- Beat eggs, mix in vegetables, garlic, and seasoning.
- Add flour.
- Heat Olive Oil in a large skillet.
- Form into patties, place in skillet cooking until bottom starts to brown.
- Flip and brown the other side.
- Enjoy with Sour Cream, Greek Yogurt, Ranch, or alone!
