Zucchini and Yellow Squash
This is more of a place holder for your grocery list. I never measure, just eyeball it so don't feel like this has to be specific

Servings: 1 Batch (About 4-6 Servings)
Ingredients
- 2 Large Zucchini
- 2 Large Yellow Squash
- 1 Tbsp Extra Virgin Olive Oil
- 3 Cloves garlic (minced)
- 1/2 Cup Shredded Mozzarella Cheese (optional)
- 2 Tbsp Grated Parmesan Cheese (optional)
- 1 Tbsp Basil (chopped)
Instructions
- Cut ends off of each squash, slice into thin coins.
- Place EVOO and squash into a large skillet or grill basket. Heat over medium heat for about 5 minutes, add in garlic, cook another 5 minutes or until veggies are tender but still crisp.
- Top with basil and cheeses, long enough to melt.
