Ingredients
  • 2 Large Zucchini
  • 2 Large Yellow Squash
  • 1 Tbsp Extra Virgin Olive Oil
  • 3 Cloves garlic (minced)
  • 1/2 Cup Shredded Mozzarella Cheese (optional)
  • 2 Tbsp Grated Parmesan Cheese (optional)
  • 1 Tbsp Basil (chopped)
Instructions
  • Cut ends off of each squash, slice into thin coins.
  • Place EVOO and squash into a large skillet or grill basket. Heat over medium heat for about 5 minutes, add in garlic, cook another 5 minutes or until veggies are tender but still crisp.
  • Top with basil and cheeses, long enough to melt.
