Ingredients
- 2-3 Chicken Breast
- 1 of Rotel (diced tomato and chilies) (14.5 oz)
- 3 Bell Pepper (cored and sliced, any variety)
- 1 Packet of Fajita Seasoning
- 1 Onion (halved and sliced)
Seasoning
- 3-4 garlic (Minced)
- Juice from Half a Lime
- Toppings - Sour Cream (Cheese, Guacamole)
- Tortillas
Instructions
- If chicken breasts are extra thick you will need to slice them in half
- Pour half of diced tomatoes in the bottom of your slow cooker
- Place half of sliced onion and peppers on top
- Top vegetables with chicken breasts
- Sprinkle with Fajita Seasoning
- Top with remaining vegetables and garlic
- Cook on high for 3 hours or low for 6 hours to slice chicken
- Cook on high for 4 hours or low for 8 hours to shred chicken
- Remove meat and veggies from slow cooker, toss in lime juice if desired

Low Carb - Serve over a bed of lettuce or in a low carb tortilla Mod Carb - Serve in a tortilla with Rice OR Beans
