Some weeks it is hard to keep up with meal prep. Low carb fried rice isn’t filling enough to serve to my husband and teenager as a meal, but it makes for a macro friendly lunch for me!
Ingredients for low carb fried rice
- Sesame Oil – EVOO or Vegetable oil will work in a pinch!
- Fresh or Frozen Vegetables – carrots, peas, & onions, zucchini, mushrooms. I prefer frozen because I don’t have to cut, chop, prep anything!
- Eggs
- Your favorite stir fry meat – pork/chicken/shrimp
- Garlic
- Soy Sauce or Liquid Aminos
Chicken or Shrimp Fried Rice

Ingredients
- 1 tbsp sesame oil (extra virgin or vegetable oil can work)
- 1-2 Lbs Stir Fry Meat - Pork, Chicken, or Shrimp
- 1-2 cloves garlic
- 2 Large Eggs
- 1 bag frozen vegetables (peas, carrots, peppers, zucchini, mushrooms, onion)
- Liquid Aminos or Soy Sauce
- Riced Cauliflower
Instructions
- Slice meats into bite size pieces and season as desired.
- Cook Stir Fry Vegetables in the microwave according to directions on the bag.
- Heat about 1 Tablespoon Sesame or EVOO in skillet with cauliflower rice. As it starts to turn tender, add 1-2 cloves of chopped garlic.
- Push the cauliflower towards the sides of the skillet to create a hole in the center. Add two eggs in the center, once cooked, scramble and mix in with cauliflower.
- While cauliflower is cooking, place meat in a separate skillet with a bit of oil and any seasoning (I like ginger, garlic, or liquid aminos) and slowly heat.
- Mix vegetables in with meat, then serve over cauliflower rice.
Notes
Low Carb - Cauliflower Rice
Mod Carb - White or Brown Rice. You may try mixing in some cauliflower!

Tips
- If you don’t have a lot of time, you can buy the “Fried Rice Style” cauliflower and add canned chicken to it.
- If you have time, add the fresh egg and some soy sauce too!
- Have carbs to spare? Mix some rice in with it!
