Buffalo Chicken Meatballs take a few more minutes of prep but I promise you, they will be worth it!
If you can find a low sodium Buffalo Sauce and Ranch Seasoning, that would be best. (Flavor God is about half the sodium of one of popular ranch season blends)
When you have a dish that’s higher in sodium like these Buffalo Chicken Meatballs, it’s important to be mindful of the amount of sodium you eat the remainder of your day. Be sure to get a lean protein and vegetable at your other large meal of the day.
ingredients for buffalo chicken meatballs:
- Ground Chicken – ground turkey is a few dollars less and can be substituted
- Almond Flour – I use almond flour to keep the carb count low and I’m gluten free. Feel free to use oats or bread crumbs if those are not of concern to you
- Dry Ranch Seasoning
- Shredded Cheddar Cheese
- Egg
- Buffalo Sauce
- White Onion
- Garlic
- Ground Pepper
Buffalo Chicken Meatballs
Ingredients
- 20 oz Ground Chicken
- 1/2 Cup Almond Flour
- 4 tsp Dry Ranch Seasoning (Low Sodium Variety is best)
- 1/4 Cup Shredded Cheese
- 1 large Egg
- 1 Tbsp Buffalo Sauce
- 1/2 small Onion (diced)
- 1-2 Cloves Garlic (minced)
- Ground Black Pepper (to taste)
Topping
- 1/2 Cup Buffalo Sauce (reserve for later)
Instructions
- Preheat oven to 400 Degrees
- Line baking sheet with parchment paper or grease cookie sheet.
- Combine all ingredients (minus 1/2 Cup Buffalo Sauce) in large mixing bowl. Use hands to mix everything together.
- Roll into 1-2 inch balls and place in the oven for about 15 minutes.
- Remove from oven and let set 5 -10 minutes to slightly cool.
- Put wing sauce in bowl, coat meatballs in sauce, return to pan, bake another 10 minutes.

I usually double or triple this recipe when I make it because my husband loves these for lunch as much as I do! It’s also easier to just mix up a big batch at once and freeze a portion before cooking. Place them on a cookie sheet in the freezer until set then move to an air tight container for storage.
The next time I want meatballs on my meal plan, all I do is thaw them out, bake, and toss in buffalo sauce. Easy peasy!
