I’d say that you probably weren’t seeking out a spinach recipe, which is fine.
I really wasn’t either.
Until I had a giant bag of spinach that I had no idea what to do with.
Spinach is a vegetable that I buy because it takes on flavor of the things that you cook or pair it with. I’d say that this recipe tastes like cheese, onion, and a bit of kick from the red peppers! I am gluten free so I always opt for gluten free oats or almond flour for my binder. Of course almond flour is the low carb version but feel free to use what you have on hand!
Spinach Balls or Spinach Burgers
Make these into golf ball size balls or patties. I like these when the weather starts to cool off or I'm bored with salads. A quick way to get 1-2 servings of vegetables!

Servings: 5 Servings
Ingredients
- 1 pkg Spinach, frozen (thawed)
- 1 egg OR 2 egg whites
- 2 Egg White
- 1/4 medium Onion (chopped or minced)
- 1/4 - 1/2 cup Shredded Cheese
- 1/2 cup Bread crumbs / Oats / Almond Flour (Sub Oats or Almond Flour to make gluten free)
- Sea salt (to taste)
- garlic (to taste)
- 1-2 tsp Red pepper flakes (optional)
- 1-2 tbsp Extra Virgin Olive Oil
Instructions
- Thaw and drain spinach. The drier you can get it the better! Squeeze in a tea towel to remove extra moisture.
- Mix spinach, eggs, onion, cheese, bread crumbs, salt, garlic, and red pepper.
- Form mixture into burger patties or balls about the size of a golf ball
- Heat oil in a skillet adding burgers/balls.
- Brown on each side.
Notes
These freeze well when cooled completely and stored in an airtight container. Try with regular or brown mustard for dipping!

Tips
- Serve warm with your favorite mustard. I like Brown or Garlic Aioli Mustard best!
- If you are meal prepping, be sure to let the patties cool before storing in an air tight container in the fridge
- You can also freeze them if you want to plan to eat again in a few weeks! Just pull from the freezer and let thaw.
- Don’t like spice? It’s perfectly okay to leave out the red pepper flakes!
